While the general consensus when it comes to enjoying a glass of wine is that red stays at room temperature and wine is chilled in the fridge, you may be surprised to learn that the actual temperature levels go deeper than that and can have an effect on how enjoyable the wine flavour is.
Serving a wine at too warm or too cool a temperature for its character can prevent the flavour from being balanced. Typically, both reds and whites are best served at room temperature – that being, sans controlled heating or cooling, so more akin to the temperature found in a cellar of about 50 to 70 degrees Fahrenheit.
If you truly want to get the most of the flavour that’s offered in a bottle of wine, however, experts suggest that white wines be served at a temperature of about 45 to 55 degrees Fahrenheit, light reds at about 60 and complex reds at 65 to 70.
The purpose for chilling whites is that is helps to preserve and highlight the fresh, fruity flavours. Whereas the warmer temperatures for reds allow the complexity in this variety of wine to truly shine. If the red is lighter, it’s less complex and could handle a slight chill before serving.

When using a wine cellar, keep in mind that each half hour your bottle of wine spends in the refrigerator for the first 60 to 90 minutes, it will decrease in temperature four to five degrees. After these first 60 to 90 minutes, it will decrease two to three degrees each half hour, so this will help you determine when you should put the wine in the cellar and when to take it out.
The general rule of thumb to follow for when company is set to arrive is to put red wines into the cellar 20 minutes before serving and take white wine out of the cellar twenty minutes before serving.
